Ingredients

  • 1 onion
  • 1 clove of garlic
  • 500g tomatoes
  • 600g courgettes
  • 600g aubergines
  • one red, green and yellow pepper each

Instructions

  1. Cut the tomatoes, courgettes and the aubergines into cubes. Cut the peppers into stripes.
  2. Heat olive oil in a frying pan. Sauté the chopped onion firstly and then add the pressed garlic
  3. Add tomatoes, courgettes, aubergines and peppers and fry for about 5 minutes
  4. season with ground pepper, 2 tespoons of salt and Provençal herbs and leave to simmer covered for at least 30 minutes or longer
