Ingredients
- 400g waxy potatoes
- 400g Penne
- 2 onions
- 300g bacon cubes
- 2.5 dl cream
- 200g grated Sbrinz (or (stra-)vecchio Parmesan)
- butter, pepper and nutmeg
- 750g apple puree
Instructions
- Peel the potatoes and slice them thinly with a mandolin
- Cook the potatoes with the Penne in boiling salted water until done (approx. 15 to 18 minutes)
- Cut the onions into slices and fry them in butter in a pan, set aside.
- Fry the 300g bacon cubes in the same pan and set aside separately.
- Put 2.5 dl cream in a large bowl, season with pepper and nutmeg and mix with 200g grated Sbrinz. Depending on the salt content of the cheese, add salt to taste.
- Drain the potato macaroon in a sieve and mixture well with the cream sauce and the bacon cubes.
- Decorate with the fried onions and serve with apple puree (latter in a separate plate).
