Ingredients
- 3 avocado
- 2 red onions
- 1 clove of garlic
- 80g lemon balm
- 5dl warm water
- 80g Raw ham
- Season with Sea salt and raspberry pepper
- Beetroot sprouts
Instructions
- Mash the avocados well with a fork
- Add the chopped onion and garlic clove to the mashed avocado
- Add a handful of coarsely chopped lemon balm leaves
- Add warm water and puree finely with a mixer
- Cut the raw ham into fine strips and fry in a pan (without using oil, butter or any other fat). Remove and set aside.
- Cut a small onion into thin rings and also roast in the same pan without adding fat, without having washed the pan beforehand. In this way the smell of the raw ham sticks more strongly to the onions.
- Add ham and onions to the soup and season with sea salt and raspberry pepper and garnish with beetroot sprouts.
