A nice under-week dinner for the whole family – one of our all-time favourites

Ingredients
- 4 chicken breast
- 600g carrots
- 2 cans of corn (300g each)
- 2 dl cream
- 2 dl dry white wine
- 1 banana
- circa 20 thin strips of smoked bacon (= about 80g)
- 300g basmati rice
Instructions
- Cut the carrots in sticks of 3 cm lenght and 0.5 cm square and steam them
- Mix the carrots with 2 small cans of corn (300g each, washed and drained in a sieve), 2 dl cream and 2 dl dry white wine in an ovenproof dish.
- Salt and pepper 4 chicken breasts and cut a pocket lengthwise on the underside and insert 1/4 of a banana in each.
- Spread the chicken breasts on the carrot-corn mixture and cover them with the smoked bacon strips.
- Cook for about 40 minutes at 220 degrees in the oven.
- Wash 300g basmati rice. Bring 5 dl water and 1 teaspoon salt to the boil. Add the rice, cover and let simmer for about 10 minutes.
