1. Cut the strawberries into slices about 1 mm thick.
2. Mix the stiffly beaten egg white with the finely sifted icing sugar to a mixture and coat the strawberries with it. Then dry them for 40 minutes in the oven at 150 degrees.
3. Break the chocolate into small chunks, pour over the espresso and leave to stand.
4. In the meantime, the butter and cream are stirred together in a small pan over a high heat and then poured over the chocolate while it is still hot.
5. Finally, the rose water is added and everything is mixed well together and placed in the refrigerator for one night.
