Only green vegetables left in the fridge? Combined with gambas colors comes back
Ingredients
- 1 spring onion
- 200g eggplant
- 1 green pepperoni
- 300g summer lettuce (e.g. iceberg, frisée etc.)
- 100g Kefir
- 5dl bitter white wine
- 16 freshly caught prawns
- Sea salt and Pepper
- A handful of pistachios.
Instructions
- 1. Longitudinally cut the spring onion and the green into strips
- 2. Cut the eggplant also in long strips
3. Slice the green pepper lengthwise into narrow strips - 4. Heat the white wine in a frying pan
- 5. Add the vegetables and bring to the boil for 5 minutes.
- 6. Add 16 freshly caught prawns and cook together for 10 minutes.
- 7. Chop the salad and place it on the bottom of a soup plate
- 8. Spread kefir seasoned with sea salt and black pepper
- 9. Season with sea salt and pepper
- 10. Serve with a handful of pistachios and fresh bread
