One of our favourite ice creams
Ingredients
- 1 Cavaillon melon (or any other melon)
- 4 dl cream
- 2 fresh eggs
- 120g sugar
Instructions
1. don't forget to put the container of the ice cream maker in the freezer 24 hours in advance (if needed)
2. halve the melon, remove the seeds and cut the flesh into pieces. Puree 400g of the fruit flesh with a hand blender, put the remaining melon pieces aside for decoration.
3. whip cream until stiff.
4. beat the eggs with sugar until very frothy, add the whipped cream and the melon puree and mix everything well but carefully with a whisk.
5. Put for approx. 60 minutes in the ice-cream maker and then approx. 2 hours in the freezer
6. serve decorated with melon pieces.
