An alternative way to make a Ratatouille
Ingredients
- 600g Courgettes
- 3 peppers (red, green, yellow)
- 600g carrots
- 500g cherry tomatoes
- dried Herbs provençale
- olive oil
- salt
- pepper
Instructions
- cut the courgettes and carrots into 3 cm long chopsticks. Cut the peppers into strips. Leave the cherry tomatoes whole.
- Mix the vegetables well with 1 dl olive oil, 2 tablepsoons of salt, ground pepper and dried Provencal herbs in an ovenproof dish.
- Cook the tomato and carrot vegetables in the oven at 180°C circulating air for about 40 minutes.
